Gluten Free Cocolatta Cookies

Makes 5-6 dozen (depending on scooping size)
Prep time: 30 minutes

Ingredients:

1 cup Crystal Coco coconut oil, melted
3/4 cup white sugar
3/4 cup or brown sugar or Sucanet (organic brown sugar)
1 tsp baking soda
1 tsp coconut extract
1/2 tsp salt
2 large eggs, beaten
1 cup organic Crystal Coco desiccated unsweetened coconut
2 1/4 cups Crystal Coco coconut flour
1 cup chocolate chips

Method:

Melt coconut oil and add sugars, mix well

Add baking soda, coconut extract and salt.

Add eggs and mix.

Mix together the desiccated coconut and coconut flour. Add half the flour-coconut to the oil-eggs along with the chocolate chips. Add remaining flour-coconut and mix well.

Let dough rest for 10 minutes. Pre-heat oven to 350º F.

Scoop/spoon by teaspoonfuls onto greased baking sheets. Bake for 8-10 minutes.
