Coconut Chocolate Brownies
Makes a 9 x 13 inch pan
Prep time: 45 minutes plus cooling time
Brownie Base:
Melt together 3 squares, (1 oz each) unsweetened chocolate
along with 3/4 cup Crystal Coco coconut oil
Cool a bit
Add 3 beaten eggs
3/4 cup of sugar
3/4 cup Crystal Coco coconut flour, sifted
3/4 cup chopped walnuts (optional)
Spread into 9'x13' greased pan and bake at 300 for 25 minutes. Cool thoroughly.
Coconut Frosting:
Cream together:
4 tbsp Crystal Coco coconut oil & 2 cups icing sugar
Add 2 tbsp milk
1 tsp coconut extract
1 drop yellow food coloring (optional)
Frost brownies, spreading smoothly. Refrigerate until cool and firm
Glaze:
Melt 2 squares of unsweetened chocolate with 2 tbsp Crystal Coco coconut oil
Spread over the frosted brownies and cool for 15 minutes before cutting.
