Coconut Date-Filled Cookies
Prep time: 45 minutes (plus dough chilling time)
Makes 3 dozen cookies
Ingredients:
Filling:
2 cup pitted chopped dates
1/2 cup water
1/3 cup white sugar
2 tbsp lemon juice
1 cup Crystal Coco coconut oil
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
1/4 cup sour milk or buttermilk
1 tsp vanilla
3 1/2 cups Crystal Coco coconut flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp ground nutmeg
1/2 cup desiccated coconut
Method:
Filling... Combine dates, water, sugar in saucepan. Bring to boil, then simmer, covered about 5 minutes, stirring occasionally. Add lemon juice and 1/4 tsp salt. Cool.
Pre-heat oven to 350 degrees F.
Add dry ingredients to creamed imixture. Mix well. Cover and chill 1 hour.
Divide dough in 4. On a floured surface, roll out each portion to 1/8 ". Cut with round cookie cutter and place on greased cookie sheets. Place a scant tablespoon of cooled date filling on each round. Cover with a second circle, or use a tiny cutter or a thimble to make a small circle of dough and place on the center of the filling.
Bake for 8 - 12 minutes. Makes about 3 dozen or more depending on the size of the cookie cutter.
