Braised Pork in Coconut-Miso Gravy
Makes 4 servings
Prep time: 45 minutes
Ingredients:
4 x 5 oz portions boneless pork loin
1-2 tbsp Crystal Coco coconut oil
1 small onion, diced
1/2 cup chopped mushrooms
3-4 cloves garlic, minced
1/2 tsp ground sage
Salt & pepper to taste
1 tbsp Crystal Coco coconut flour
2 tbsp white wine
1/2 cup organic chicken stock
1 tbsp light miso paste
Method:
In a skillet, brown the pork loin on both sides in a tbsp of coconut oil. Remove to a plate for a bit.
Add a bit more coconut oil and saute the onion, mushrooms and garlic for five minutes. Season with sage, salt & pepper to taste. Stir in coconut flour; then the wine. Add the chicken stock and miso paste and stir to blend. Heat to boiling, then reduce to a simmer. Return the pork loin to the pan and cover with sauce. Cover the pan and simmer for 15-20 minutes until tender.
Serve with lots of veggies and whatever (if any) starch you want (e.g. potato, rice, pasta, etc). Tonight I had mine with Curried-Coconut Sweet Potatoes :)
