Coconut Squash Biscuits
Prep time: 25 minutes
Ingredients:
1 lb. cooked squash, drained and mashed
1 small apple, peeled & diced
1 small plum, peeled & diced
2 cups all purpose flour
1 cup Crystal Coco coconut flour
1 cup flax meal flour
5 tsp. baking powder
1 tsp. salt
1/2 cup Crystal Coco coconut oil, in solid form
Method:
Pre-heat oven to 425 degrees F.
In a small pan; cook apple and plum a bit to soften, then add to the mashed squash.
Sift together the flour and coconut flour, then mix in the rest of the dry ingredients. Cut in the solid coconut oil until crumbly.
Mix squash mixture with the dry mixture just until it holds together. Make into balls and place on an un-greased baking sheet.
Bake for 12-15 minutes
