Oatmeal Coconut Crispy Cookies
Makes 4 dozen
Prep time: 30 minutes
Ingredients:
1 cup Crystal Coco coconut oil - in the solid state
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
1 1/2 cup Crystal Coco coconut flour
1 1/4 cup oatmeal
3/4 c Crystal Coco desiccated coconut
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Method:
Pre-heat oven to 375 degrees F.
Cream sugars with coconut oil. Add eggs and beat well.
In a bowl, sift the dry ingredients together. Add to creamed mixture and mix completely.
Grease cookie sheets with coconut oil.
Roll dough in 1" balls and flatten with a fork dipped in milk.
Bake at 375 for 6 -8 minutes.
