Chef Kevin's Power Smoothie
"This is my usual daily power breakfast, along with some almonds & Brazil nuts, and maybe a gluten free muffin or something. It's full of anti-oxidants, and of course... a healthy dose of lauric acid from our coconut oil :)"
Makes 1 serving of about 2 cups
Prep time: 10 minutes
Ingredients:
1/2 cup wild Nova Scotian blueberries
3 curcumin capsules (optional)
1/2 banana
2 tbsp 4-6% fat yogurt
1 tbsp honey
1 cup or so almond or rice milk (however thick you like it)
1 tbsp Crystal Coco coconut oil, melted
Method:
In a blender... add the blueberries. Open the curcumin capsules and sprinkled them in (be carful not to get any on your clothes, and wash your hands right away... this stuff stains like crazy :)
Add banana (unless it's black fly/mosquito season... more later), yogurt, honey, almond milk, and turn the blender on to puree. While running add melted coconut oil.
This smoothie gives me lots of energy, and is also a powerful cancer fighter with all the anti-oxidants from the berries and curcumin, important for everyone
As to the bananas and black fly season, they are very high in potassium, something flies are drawn to like a magnet. Same goes for pineapple, peaches, nectarines and some other fruit. This time of year I back off on those and use other berries like strawberries or things like watermelon, etc...
